Italian-Style Turkey Breast with Fresh Herbs

Serve this dish with steamed vegetables for a satisfying meal.

Yield: 4 servings

2 tablespoons olive oil

1 tablespoon finely minced garlic

1/4 cup dry white wine, like Chardonnay

1 pound thinly sliced skinless turkey breast fillets

2 tablespoons minced fresh rosemary

2 teaspoons dried marjoram leaves

1 tablespoon paprika

1/4 teaspoon ground black pepper

1/4 teaspoon salt

Heat the olive oil in a large (12 to 13-inch) sauté pan over medium-high heat until glistening, then reduce the heat to low, add the garlic, and sauté for 5 minutes or until tender, stirring frequently. Deglaze with white wine, stirring to release the fond (the brown bits from the bottom of the pan) and turn up the heat to medium-low. Add the turkey and rosemary, season with the marjoram, paprika, pepper, and salt, and cook for 3 to 4 minutes per side, or until golden brown.
